Sourced from smallholder farmers in the Molino Norte region of Matagalpa, Nicaragua, this coffee is a testament to meticulous care. A blend of Yellow and Red Catuai, Catimor, and Parainema varietals, the beans undergo a 12-14 hour fermentation after being fully washed, then are dried on patios and raised beds. This process yields a medium roast that is wonderfully balanced, offering a delightful interplay of cocoa, floral, and citrus tones.
